Pesto

Serves  2

Ingredients:

  • 1 good  handful  of  basil  leaves
  • 1‐2  tbsp  of  pine  /  Brazil  /cashew  nuts
  • 3‐4  tbsp  of  pumpkin  seeds
  • 5  sundried  tomatoes
  • 1 clove  of  garlic
  • About  ½  –  1  cup  of  extra  virgin  rapeseed  or  olive  oil  (depends  on  preferred   texture)

Method:

  1. Put all ingredients into a blender and whizz.

Serve with buckwheat crackers.
